![]() ![]() Savory Baked Pumpkin with Chicken & Mushrooms. I've been more successful here than anywhere else! I also subscribe to Light & Tasty (part of Taste of Home) and I highly recommend that magazine, it really proves that you can eat healthy and enjoy it. Entice yourself with variety of recipes using a beef, pork, or lamb. I try to focus on cooking healthy foods, though I believe if you're going to indulge you might as well go all the way (case in point: Black Forest Cake)! I'm always looking for new and unusual recipes and my main source is the net, currently 'zaar. I made the sauce by sauting some ginger, garlic, and scallions, then deglazing the pan with Chinese rice wine, just a touch of soy sauce, some fresh orange. Shaoxing wine: This is a staple in all Chinese restaurants (dry sherry is a good substitute.) Sesame oil: For that characteristic Asian flavor. Brown Sugar: To balance out the savory and acidity. Chicken broth and Soy Sauce: Both low sodium. On high heat, cook the chicken until they are half done. Chicken Stir Fry Sauce: Water and Cornstarch: Used to thicken the sauce. ![]() Add in the chicken pieces and stir to coat them well. Stir this until oil emerges from this masal mixture. Add the cornstarch and bring to a boil cook for 1 more minute or until sauce has just started to thicken. Pour the soy sauce mixture over the chicken and vegetables cook for 30 seconds. In a small bowl mix the cornstarch with a tablespoon of cold water. ![]() Add in the powders and the chopped tomato. In a bowl whisk together the chicken broth, honey and soy sauce. Stir well at this time because they tend to stick to the bottom of the pan. Cook chicken in oil 4 to 5 minutes, stirring frequently, until no longer pink in center. Add in the ginger garlic and saute for another few minutes. 2 In 12-inch wok or nonstick skillet, heat oil over medium-high heat. I love to cook! I occasionally do cooking demonstrations at work and typically have over 40 people! This is a lot considering I have no professional training, and I never really cooked at all until a few years after high school. 1 In small bowl, mix juice, soy sauce and cornstarch until cornstarch is dissolved set aside.
